  • Large onion peeled – 1/2 large onion
  • Large carrot peeled – 1
  • Garlic peeled – 2 cloves
  • Dried oregano – 2 pinches
  • Ground beef – 300 g / about 10.5 oz
  • Tomato paste – 1 tbsp
  • Worcestershire sauce – 1 tbsp
  • Bay leaf – 1
  • Dry red wine – 30 ml / 2 tbsp
  • Chopped tomatoes – 1 × 400 g can / about 14 oz
  • Whole milk for meat sauce – 50 ml / about 3 tbsp
  • Salt – To taste
  • Freshly ground black pepper – To taste
  • Butter – 25 g / about 2 tbsp
  • All-purpose flour – 25 g / about 3 tbsp
  • Whole milk for white sauce – 300 ml / about 1 1/4 cups
  • Ground nutmeg – 1 pinch
  • Cheddar cheese grated – 60 g / about 1/2 cup
  • Parmesan cheese grated – 30 g / about 1/3 cup
  • No-boil lasagne sheets – 6 sheets

Instructions
 

Step 1: Preheat the Oven

  • Preheat the oven to 425°F (220°C). Getting the oven fully heated before assembling helps the lasagne start cooking evenly as soon as it goes in.

Step 2: Prepare the Vegetables

  • Grate the onion and carrot, then finely mince the garlic. Grating the vegetables helps them soften quickly and blend smoothly into the beef ragù.

Step 3: Start the Beef Ragù

  • Heat the olive oil in a large skillet over medium-high heat. Add the onion, carrot, garlic, and oregano, then cook for 2–3 minutes until softened and fragrant.

Step 4: Brown the Ground Beef

  • Add the ground beef and break it apart with a wooden spoon. Cook until browned and no pink remains, stirring occasionally so the meat develops plenty of savory flavor.

Step 5: Cook the Tomato Paste

  • Stir in the tomato paste and cook for about 1 minute. I never skip this step because briefly cooking the paste gives the ragù a deeper, richer tomato taste.

  • Add the Worcestershire sauce, bay leaf, salt, and freshly ground black pepper. Stir everything well so the seasonings are evenly distributed throughout the beef mixture.

  • Pour in the red wine and let it simmer for 1–2 minutes. Scrape the browned bits from the bottom of the skillet because they add extra depth to the sauce.

  • Stir in the chopped tomatoes and bring the ragù to a gentle simmer. Add the milk and cook for 10–15 minutes, stirring occasionally, until the sauce becomes rich and slightly thick.

Step 9: Make the White Sauce

  • Melt the butter in a saucepan over medium-low heat and stir in the flour. Cook for about 1 minute, stirring constantly, until the mixture becomes smooth and lightly bubbling.

  • Gradually pour in the milk while whisking continuously. Adding it slowly keeps the white sauce smooth and prevents those little flour lumps I’ve learned are much easier to avoid than fix.

  • Cook until the sauce thickens, then season with nutmeg, salt, and pepper. Stir in most of the Cheddar and Parmesan until smooth, saving a little Parmesan for the topping.

  • Spread a thin layer of beef ragù across the bottom of the baking dish. Arrange lasagne sheets over the sauce, trimming them if necessary so they fit neatly.

  • Add another layer of beef ragù followed by the creamy cheese sauce and more lasagne sheets. Continue layering until the ingredients are used, keeping enough white sauce for the top.

  • Spread the remaining white sauce evenly over the final pasta layer. Sprinkle with the reserved Parmesan so the lasagne develops a beautifully golden, lightly crisp topping.
