This gordon ramsay chilli con carne recipe is a hearty, comforting dinner made with ground beef, tomatoes, kidney beans, and warming spices. I love how everything slowly simmers into a rich, thick sauce with just the right amount of heat. In my kitchen, it always tastes even better after resting for a few minutes before serving.
Heat the olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat. Add the ground beef and break it apart with a wooden spoon. Cook for 6–8 minutes until well browned, then drain any excess fat if needed.
Step 2: Cook the Onion and Bell Pepper
Add the chopped onion and red bell pepper to the browned beef. Cook for 4–5 minutes, stirring occasionally, until the vegetables begin to soften. Stir in the minced garlic and cook for another 30 seconds until fragrant.

Remove the pot from the heat and stir in most of the chopped cilantro with a squeeze of fresh lime juice. Let the chilli con carne rest for about 5 minutes before serving so the sauce thickens slightly and the flavors settle together.
